High Fibre Oatmeal Carrot Pancakes for Divorcing Girls

It seems that more women than men experience inconsistency when going through divorce. It probably has to do with differences in how men and women process stress. Also, anecdotal evidence suggests that women tend to eat less (they go on a divorce diet) and also, when they do eat, it often is not a very balanced menu. We all know that a diet that is imbalanced in any way can lead to inconsistency and this crisis can cause great pain in nether regions, if you know what I mean. 🙂

If you are cooking for one due to a recent divorce, you need to stay up on your nutrition. You absolutely have to have enough fibre. What is more grotesque than a bout of you-know-what? Eh? The last thing you want to deal with during this diffiucult time is issues in the bidet. So, here’s a high fibre pancake recipe we think you will love (certainly your bun buns will love it):

High fibre Oatmeal Carrot Pancakes for divorcing girls
Ingredients:
1 egg
6-8 baby carrots
1/4 cup oatmeal
1/2 cup all purpose flour
teaspoon allspice mix
1 cup water
1/4 cup brown sugar
Preparation
Grate baby carrots and mix with oatmeal. Add sugar to the batter and mix all three ingredients together till it is even. In separate bowl, beat egg. Blend flour with egg and slowly add water till moistened but not watery. Fold in carrot oatmeal mixture. Sprinkle allspice into it. Blend well. (The finished mixture should be firm, neither hard nor watery so use discretion as we are not particularly good “measurers”).
Now, put a frying pan with corn oil (never olive oil) to heat over medium flame. When the oil is quite warm, scoop small amounts of batter and drop into the oil. Flatten so that it looks like a latke. Brown on both sides.
Serve with warm tea and a slice of fruit.

This should take care of any fiber issues you are having. If not, you may need to get youself some milk of magnesia. No, seriously……….
